1 green onion (scallion), chopped very fine
1 T. fresh lime juice
1/4 c. crème fraîche
2 T. extra virgin olive oil
sea salt and black pepper to taste
100 g (3.5 oz.) mâche rosettes, no roots, rinsed, spun dry
1 avocado, sliced
1 plum, chopped coarsely
1 grapefruit, sectioned and peeled
Combine green onion, lime juice and cream in a small bowl.
Whisk in olive oil.
Add salt and pepper.
If you like spicy food, add a few slices of a moderately hot pepper.
Toss mâche with dressing in large salad bowl.
Arrange fruit around the salad.
Serves 4.
