Start a pot of water (with the usual dash of salt) boiling for the pasta.
Chop onions and garlic finely. Slice mushrooms thinly.
Wash and trim spinach, chop coarsely. Grate cheese.
Add pasta to boiling water. Cook as directed.
Heat butter, oil and wine in a large skillet.
Saute onions and garlic.
Add spinach, cook covered until wilted.
Add mushrooms, basil, salt.
Simmer for five minutes, check that everything is done.
Stir in cheese.
Combine sauce and pasta while both are still hot and before spinach
fades in colour.
